•    Cheese and Cracker platter – assorted cheeses with crisps and crackers


•    Crudité platter – Assorted vegetables w/freshly made dip 


•    Shrimp cocktail –  Accompanied by cocktail sauce & lemon wedges 


•    Stuffed clams – Clam shells filled with a bread stuffing packed with clams, baby shrimp and crab meat

Lunch

•    Sandwiches – Choice of French loaf, chabatta bread, rolls, whole grain breads or wraps filled with fresh cold cuts, tuna or chicken salad or roasted vegetable with fresh mozzarella


•    Tea sandwiches – miniature sandwiches filled with your choice of cold salads or turkey breast w/cranberry dressing, baked ham with smoked gouda and Dijon dressing


•    Chicken cutlets – platter of thinly sliced fried chicken cutlets – served with a spring mix of vegetables and vinaigrette dressing


•    Burritos – Grilled marinated chicken breast, salsa, black beans, Mexican rice and cheese, rolled and baked


•    Mex-Tex Fajita Salad - Tossed  romaine salad platter with marinated grilled chicken, crumbled bacon, diced tomatoes, corn, diced hard boiled egg with tortilla strips – served with ranch dressing


•    Quiche – Broccoli cheddar or Quiche Lorraine – baked in a flaky pie crust – serves 8

Entrees

•    Pork Loin – butterflied pork loin, stuffed with a mushroom duxelle served with roasted vegetables and a cranberry orange sauce


•    Pork Tenderloins – Asian spice glazed pork tenderloin medallions


•    Stuff Pork Chops – Boneless loin chops stuffed with apple and cranberry or a mushroom stuffing


•    Boneless Chicken breast roasted with red potatoes, onions & peppers


•    Chicken Marsala with thinly sliced portabella mushrooms in a light flavorful Marsala sauce


•    Chicken Parm – lightly breaded and fried boneless chicken smothered in freshly made marinara sauce, mozzarella cheese and baked


•    Chicken Mediterranean – Sautéed boneless chicken breast smothered in roasted             vegetables


•    Chicken Florentine – Sautéed boneless chicken breast on a bed of wilted fresh spinach in a wine and butter sauce


•    Turkey Breast – roasted turkey breast, carved - served with gravy


•    Baked Ham – glazed with fruit and carved


•    Manicotti – crepes filled with ricotta and mozzarella baked in tomato sauce – may be accompanied by Italian sausage and/or meatballs


•    Eggplant Casserole – thinly sliced eggplant, lightly fried and layered with seasoned ricotta and mozzarella, covered in a marinara sauce – served by the square.


•    Ziti casserole with marinara or meat sauce, tossed with ricotta and mozzarella and baked to perfection


•    Sea Scallops pan seared and drizzled with a balsamic vinegar reduction


•    Shrimp scampi – large gulf shrimp sautéed in a white wine and butter sauce served alone or over linguini


•    Stuffed Peppers – Halved green bell pepper stuffed with extra lean beef and rice and baked in a light marinara sauce


•    Chicken Pot Pie – Boneless all white meat chicken chunks, carrots, potatoes, celery and peas baked under a crispy layer of puff pastry

 
 
Vegetables

•    Tossed salad of baby greens, assorted fresh vegetables, crumbled feta or blue cheese and roasted pignoli nuts.


•    Garden salad – Romaine lettuce with an assortment of garden fresh vegetables


•    Antipasto – complete with all the classic accompaniments (pickled and roasted vegetables, proscuitto, provolone, olives, etc.)


•    Roasted candied yams – cubed and candied with maple and brown sugars


•    Glazed Carrots – baby carrots glazed in a fragrant butter sauce


•    Broccoli – Steamed broccoli drizzled with a lemon-butter herb sauce


•    Asparagus – Each spear is wrapped in puff pastry and baked


•    String bean salad – served cold with raspberry vinaigrette, seasoned with garlic, oregano and red onion


•    String bean almandine – crisp, green beans in an almandine sauce


•    Cauliflower au gratin – Cauliflower florets baked in a cream sauce


•    Zucchini and Yellow Squash – Sautéed with onion and garlic

 
 
Starches

•    Rice Pilaf w/ finely diced onion, peppers, sun dried tomatoes


•    Rice Pilaf w/baby shrimp and saffron seasoning


•    Roasted potatoes – red skin potatoes with thinly sliced onion and peppers roasted


•    Mashed potato pie – creamy mashed potatoes with mozzarella cheese, crusty crumb topping


•    Twice baked potatoes – creamy seasoned mashed potatoes, re-stuffed with mozzarella              cheese and crispy crust


•    Potato salad – red potatoes w/finely diced carrot, celery & onion w/either mayonnaise or oil & vinegar dressing


•    Pasta salad – Rotini pasta lightly tossed with fresh garden vegetables and a light vinaigrette dressing


•    Potato Knish – Flavorful mashed potatoes with cheddar and mozzarella cheeses inside a bursting puff pastry package


•    Tortellini with pesto sauce


•    Candied Yams – Yams are cubed and baked in a brown sugar syrup


•    Sweet Potatoes – Cubed and roasted in the oven with onions and seasonings


•    Asian noodles with vegetables – served hot or cold – Asian noodles tossed with stir fried broccoli, mushrooms, baby corn, water chestnuts in a fresh ginger teriyaki sauce
